A winning recipe for a pear crumble dessert has earned a Vancouver Island University (VIU) Baking program student the chance to represent BC in the USA Pear Bureau’s Culinary Student Competition.
Winning for BC with her Pear Custard Cheese Crumble recipe, Esther LePage will compete in the national competition on April 14 in Montreal.
A student in VIU’s Professional Baking and Pastry Arts program, LePage says she was surprised to learn her recipe had won for BC.
“I really like crumbles and thought I should create a recipe for something I like,” says LePage, whose hometown is just outside Montreal.
A few months away from completing her program, LePage is aiming to work in an artisan bakery in Victoria.
LePage will be vying for a $2,500 first prize, with an additional $500 going to the winning institution. Her recipe was judged for its originality, creativity, appearance and mechanics, and by its prominent use of fresh USA pears and at least one Canada-produced ingredient that compliments the pears.
