Talented Vancouver Island University students, alumni and
instructors serve up a tantalizing mix in Recipes from the Culinary
Institute of Vancouver Island at VIU.
“A few students came up with the idea of producing the
cookbook as a fundraiser,” said instructor Debbie Shore.
The project expanded to feature favourite recipes of
students, faculty and graduates. The $20 book includes dishes from appetizers
such as ham and cheese croquettes to crab and asparagus soup, East Indian
influenced potato salad and Hawaiian meatballs. Sour cherry, mascarpone and
crepe pudding is one of many desserts.
Proceeds from the sale of the cookbook will support student
field trips, culinary competitions and guest speakers. “It’s all to enhance
students’ learning,” Shore said.
Some of the proceeds will go to produce a second volume.
Culinary Institute of Vancouver Island will launch the
cookbook Wednesday, Dec. 16 from 1 pm to 2 pm. at the VIU bookstore. Samples
from some of the recipes will be served.
