Seth Gustavson (right), a third-year apprentice in Malaspina University-College's Professional Baking program, is suitably impressed with the amazing talents of world class professional baker Ciril Hitz (left). Hitz created these edible decorative breads from scratch in half an hour while mentoring students in Malaspina's Professional Baking and Culinary Arts programs. He also led a breadmaking workshop for 65 professional bakers from Vancouver Island, the Lower Mainland and Alberta during his recent two-day visit to Malaspina. Hitz, the winner of many national and international awards, is Department Chair for the International Baking and Pastry Program at Johnson & Wales University in Providence, Rhode Island. His visit was sponsored by the Baking Association of Canada BC Chapter’s Vancouver Island Committee.
